Sweet, smooth, and satisfying. Combine the flavors of this year's strawberry harvest with the rich flavors of your favorite type of vanilla. Strawberry Vanilla jam is a sure hit with any crowd.
Makes seven 8-ounce jars
Ingredients
6 pounds strawberries, halved and hulled 12 vanilla beans, sliced in half lengthwise (preferably Madagascar) 2 cups of sugar
Preparation
- Combine strawberries, vanilla beans, and sugar in large mixing bowl. Mix well.
- Transfer contents from mixing bowl to large pot. Cook at temperatures between 185F and 195F for approximately 40 minutes. Strawberries should become very soft.
- Use a potato masher to break down strawberries. Taste and add sugar if needed. If sugar is added, be sure to mix well to ensure sugar is dissolved. Remove and discard vanilla beans.
- While jam is hot, ladle into sterilized canning jars. Leave about 1/4 inch at top of container. Remove air bubbles by using non-metallic utensil between jar and jam. Top with sterilized lid. Close tightly and cool to room temperature.
