This is a delicious and and unique recipe for making one of America's favorite sodas, vanilla Cream Soda.
Ingredients
4 qrts. Water 1 vanilla bean (preferably Bourbon) 1/4 Cup Raisins
3 Inches Cinammon Bark 1 3/4 Cup Brown Sugar 1/4 Tsp. Cream of Tartar 1/8 Tsp. Ale Yeast grains 1/4 Cup Lukewarm Water (for the yeast)
Preparation
- Bring water to simmer. Add cinnamon bark, vanilla bean, raisins, and sugar. Simmer for about 25 minutes.
- Take mixture off of the heat. Add in the cream of tartar. (note: if you would like to add other flavors, add the syrup, oil, or essences now).
- Cover and let mixture cool for at least 1 hour. Strain and transfer into large container (glass carboy is ideal) with the remaining 2 quarts of cool water. Hydrate yeast with lukewarm water and add to container.
Bottle the soda in glass, capped containers. Store in cool, dark, stabile temperature place. Check bottle carbonation after 2 days. If carbonation is satisfactory, transfer bottles to refrigerator. Carbonation should not take more than 3 days.
