Vanilla Bean Cream Soda

This is a delicious and and unique recipe for making one of America's favorite sodas, vanilla Cream Soda.

Ingredients

4 qrts. Water
1 vanilla bean (preferably Bourbon)

1/4 Cup Raisins
3 Inches Cinammon Bark
1 3/4 Cup Brown Sugar

1/4 Tsp. Cream of Tartar

1/8 Tsp. Ale Yeast grains

1/4 Cup Lukewarm Water (for the yeast)

Preparation

  • Bring water to simmer. Add cinnamon bark, vanilla bean, raisins, and sugar. Simmer for about 25 minutes.
  • Take mixture off of the heat. Add in the cream of tartar. (note: if you would like to add other flavors, add the syrup, oil, or essences now).
  • Cover and let mixture cool for at least 1 hour. Strain and transfer into large container (glass carboy is ideal) with the remaining 2 quarts of cool water. Hydrate yeast with lukewarm water and add to container.
  • Bottle the soda in glass, capped containers. Store in cool, dark, stabile temperature place. Check bottle carbonation after 2 days. If carbonation is satisfactory, transfer bottles to refrigerator. Carbonation should not take more than 3 days.
  • Enjoy.
