Grade B Mexican vanilla beans (also called extract beans) contain significantly less moisture and are less attractive. They are smaller and contain many imperfections (splits and cracks), unlike our premium Grade A beans. Mexican Vanilla Beans are rich and smooth with subtle tones of smoke and spice.
Our Mexican vanilla beans have a very smooth, creamy flavor with a hint of spice. They are very delightful and commonly used for making extract. Mexican vanilla has the familiar natural vanilla flavor that we associate with vanilla bean ice cream and other vanilla-flavored desserts. These beans are cured using sun and oven-wilting procedures. These are remarkable beans and a popular favorite.
To use a vanilla bean, cut each end off from the vanilla bean and slice through the vanilla bean lengthwise, remove the paste from inside the vanilla bean and use as needed.
