Bacon is one of the most delicious, mouthwatering meats. The smell of cooking bacon in the morning will wake just about anyone from the deepest sleep. But….. bacon isn’t just a side accompaniment for your over easy eggs. Bacon has gone mainstream and is now added to not only savory foods but also sweet confections. Bacon caramel corn, bacon vanilla shakes and bacon topped cupcakes are just a few of the creative ideas I have seen floating around the internet. Desserts with bacon combine the sweet and the salty to make the perfect sweet treat.
There is nothing more beautiful or fragrant than a strawberry picked fresh from the field. Warmed by the summer sun, the bright red and juicy berry begs to be eaten. The berries that make it home are the perfect addition to any dessert, but why stop at dessert? Freshly picked strawberries are the perfect combination of sweet and tart. The perfect complement to a fresh spinach, briny feta and crunchy pecans. My mouth waters just thinking about it.
It’s been a long but productive week, and it’s only Wednesday! By mid-week I am very ready for the weekend, and tired of cooking. Takeout would be a simple solution, but not always the healthiest choice. So, when I am tired, my simple recipe of choice is mango salsa. Bright, sweet and fruity mango is diced and combined with spicy jalapeño, juicy red tomatoes, red onions and chopped garlic. The addition of a Tahitian vanilla bean to my salsa adds a sweet and floral flavor and enhances the natural sweetness of the mango. Mango salsa with Tahitian vanilla bean is the perfect complement to grilled fish, sautéed chicken or savory flank steak fajitas.
The combination of fresh fruit, crisp vegetables and vanilla may seem like a strange concoction. I assure you that it is incredibly delicious!
Super Bowl Sunday brings many families together; it is the quintessential American holiday. Many of you may not know that the Farmers Market is a constant source of inspiration in my recipes and cooking. Many culinary trends begin within the famers market stalls. I often can be found wandering the market in search of photo ops and new trends. Each week I gather some interesting produce and of course an arm load of fresh flowers for the holiday table. These items often include pink lemons, baby squash, truffle oil, some beautiful aged balsamic vinegar and of course Hawaiian purple sweet potatoes.
The Thanksgiving holiday is over and I bet you ate way too much just like me! For those of you that braved the mad shoppers this past weekend; I have a simple but hearty dish to warm you up and keep you going this week. Risotto is a staple in our family. Its versatility and delicious texture and flavor is a hit with both my children and husband. It is also a very elegant dish to serve to your guests. Simple additions of items such as peas and lobster make for a stunning and satisfying meal for any culinarian.
The three most important foods on the Thanksgiving table to most people are a golden brown turkey, delicious stuffing and, of course, cranberry dressing. In years past, I have simply used the quintessential canned dressing or jelly. Not anymore! Scratch-made cranberry sauce is one of the easiest dishes I can bring to my table. A simple mixture of fresh cranberries, sugar, Tahitian Vanilla and lemon grass creates a familiar, but unique, cranberry sauce. Lemon grass is a beautifully fragrant herb that grows in long stalks, and is primarily used in Thai cuisine. It is very versatile and can be used with a variety of proteins, soups, jams and relishes. I like the bright citrus flavor that it brings to my cranberry sauce.
Fall is upon us, and the squash crop is showing up in the grocery stores and farmers markets. I know you were expecting a dessert recipe, but I can’t survive on desserts alone, contrary to popular belief! As fall approaches, my family and I start to crave those comfort foods that make you feel warm and cozy when the temperatures start to drop.
