Bread pudding and soufflés are two of the pastries that I have never made...can you believe that?! To be completely honest, I hadn’t even tried either one until a recent trip to New Orleans. I have a difficult time ordering desserts such as bread pudding when I am dining out because; a) I bake for a living, and b) If I am going to order dessert, it has to be unique and absolutely decadent. I have never really thought of bread soaked in a custard as either decadent or unique. Boy was I wrong! The bread pudding I had was creamy, sweet and absolutely decadent. I knew I had to put that on my checklist of desserts to recreate when I got back home. The recipe I chose is an adaptation of the recipe that is used at Bon Ton in New Orleans. I substituted the whiskey sauce for a creamy and delicious vanilla crème anglaise and omitted the raisins (I just don’t like raisins in pastries!). I also added chopped white chocolate (I like Callebaut chocolate), and I have to admit that it was absolutely divine!15 Apr
I visit the Beanilla distribution warehouse from time to time to discuss posts, pick up product and just to say hello to fellow employees. The moment you step into the building the intoxicating aroma of vanilla hits you. It is absolutely delicious! During a recent visit I asked my fellow teammates if they had any requests for posts. Natalie, our warehouse manager, was more than eager to provide me with suggestions. One of the most delicious and trendy requests was for a caramel bar. Smooth and creamy homemade caramel sits on top a layer of salty and crunchy coconut base, and the entire bar is then slathered with delicious high quality dark chocolate. Cooking with children is not only fun and builds fundamental skills such a fractions, whole numbers, science and reading, but it also creates wonderful memories. Chocolate mousse is a fantastic intermediate recipe to create with your pre-teen or teenager. Simply divide up the components of the recipe into the chocolate mixture, egg whites and whipped cream. Give the child (or children) the individual component and bring all the items together in the end to create the recipe.18 Mar
One of my very first jobs was working as a barista for a small coffee company. I really enjoyed working with the coffee and the customers, and the aroma of the shop was delicious. The only drawback of working with coffee was the fact that I did not drink coffee. I had no idea what it tasted like, nor could I tell the customers the difference between a dark espresso roast and a Sumatra (I can’t imagine surviving the mornings without at least one cup nowadays!) I was able, however, to trade the leftover coffee at night for pastries at the bakery next door. One of the most decadent trades was their peanut butter dream bar.28 Feb
Did you ever have a time in your life where you ate so much of one particular food item that you can’t stand the smell, taste or look of that item any longer? For me, it is the peanut butter cookie. I know you are thinking, “How could you not like peanut butter cookies?” I have one very good reason...my father! My father is a wonderful man that I truly enjoy spending time with, but when he becomes fixated on a certain food item, it tends to make an appearance many, many times! A good example is peanut butter cookies. He decided that homemade peanut butter cookies would be a thoughtful and delicious addition to our school lunches… and they were… for the first week. After a month of peanut butter cookies making a daily appearance, we began to tire of them. At two months, we kindly asked him to please refrain from putting them in the lunches (I’m pretty sure it wasn't so eloquently asked, but I think he finally got the point). We were wrong. The peanut butter cookies continued to make an appearance, but this time they were topped with a Hershey kiss. This did not improve upon them! Thankfully, he finally grew tired of them himself, and one glorious day, they were no longer gracing the top of our lunches, halleluja! This was over 25 years ago and, until recently, I would not make any peanut butter cookies, often blaming food allergies for their lack of appearance in our home.15 Feb
There is nothing quite as delicious as a chocolate chip cookie straight from the oven! Hot and delicious, the chocolate still melted and the center of the cookie so soft and delicious it breaks apart in your hand. My mouth waters just thinking about it!11 Dec
My husband is not a dessert fan, which always bewilders friends and acquaintances when they learn I am a pastry chef. He would happily eat pizza in place of dessert any day. I had the honor of co-hosting the rehearsal dinner for my brother and his beautiful wife-to-be this past weekend. While I enjoy the savory part of dinner, ultimately my passion lies with pastry. So, of course, I had to include a few desserts in the dinner. My brother and his fiancée love chocolate, particularly chocolate and peanut butter. When I was little my grandmother always had a plate of freshly baked chocolate chip cookies sitting on her kitchen counter. They weren’t the large cookies you see now days in bakeries. They were relatively small, perfectly round, two bite cookies. The cookies always had a soft interior, and were slightly crisp on the edges.
My grandmother would sit us down at the kitchen table, pour us a cold glass of milk (put into commemorative Snoopy glasses from a popular fast food chain), and hand us a plate of her delicious cookies. When my grandparents sold their home I remember thinking, “All I really want to have is the Snoopy glasses and my grandmother's chocolate chip cookie recipe.” Unfortunately, I wasn’t able to get either one, but it started my search for the chocolate chip recipe of my childhood.29 Sep
I like unique flavor combinations. Any combination of flavors that remind me of being at the beach are even better. I have always dreamed of living near the ocean and was blessed to have had that opportunity recently. I am now near water again, Lake Michigan to be exact. The lake is beautiful, the sand is a pure white color and it is very calm and peaceful out there. But, there is nothing quite like the sounds, smells and tastes of the ocean! The fish tacos, the tropical drinks, the smell of the ocean air and of course coconut suntan lotion.
You know that I am a huge fan of Beanilla's baking extracts and flavors, I love the fresh unprocessed smell and flavor. But I must admit I was a little skeptical of the coconut extract. Most grocery store brands smell like, well.... coconut suntan lotion. I love the smell, but hesitate to put it into my desserts. Beanilla coconut extract does not smell like coconut suntan lotion, quite the opposite actually. I opened the bottle and was greeted by a pleasant waft of pure coconut, the kind you experience when you crack open a fresh coconut.10 Sep
As a chef, I am often reminded that what I think is easy and uncomplicated, is not necessarily. Chocolate ganache is often thought of as fussy and complicated, and I want to tell you it as simple as 1...2...3. Chocolate ganache originated in France. Ganache is a French term referring to a smooth and velvety mixture of chocolate and cream. Its origin is a little unclear, but it is believed to have been invented around 1850. Some say it originated in Switzerland where it was used as a base for truffles. Others say it was invented in Paris at the Patisserie Siravdin.
Ganache is a simple mixture of hot cream and good quality chocolate. As much as we all love Hershey's, this is not the place for it. I recommend Callebaut, Valhrona or any other high quality dark chocolate. Look for chocolate that contains cocoa butter as the primary ingredient. The higher the quality of chocolate used, the better the flavor and texture your ganache will have in the end.13 Aug
